O N E I R I C pronounced Oh!-ne-rik “to dream” is exactly that a hidden gem nestled in the heart of the cool-climate Elgin Valley, the valley is tucked away in the Kogelberg Biosphere in Elgin to be exact. I haven’t been there yet! I have however tasted a few of their wines. In recognition of the families many generations of mining stock, the Pascall’s decided to play on a Copper theme, with each varietal’s label playing on a different copper derivative; from Chalcopyrite/Fools Gold and Malachite to the rich blue of Azurite. The labels are striking and stand out on any wine list. Although typically complex, many rare red-wine blends do conform to certain patterns. Many Red Blends are regional twists on the classic Bordeaux Blend, by adding their local signature grape to a basic Cabernet-Merlot blend, many regions have successfully broadened the appeal of their wines while maintaining a degree of regionality.

A blend of 50% Cabernet Sauvignon and 50% Merlot. A rich palate of violets, red plums and black cherries. Light cigar box and sour cherry finishing with a deep cranberry. Lively acidity.
Dad calls this a “lunch time” wine, I call it an “any time” wine – beautiful balance!
Personal Food pairing:
This classic red wine blend, Cabernet Sauvignon Merlot is so popular because these two grape varieties fit together like the pieces of a puzzle. The Cabernet Sauvignon provides a fine structure, i.e. tannins and acidity, while the Merlot fills it with fruit flavor’s like plums and cherries. The richness of fatty meats like beef and lamb goes beautifully with the tannins. The combination of the two results in the Cabernet Merlot providing a smoother mouthfeel. The famous Italian Bolognese sauce tastes heavenly with Cab Merlot for the above mentioned reason. Don’t think you have the energy to whip up these dishes? Get a takeaway!
