O N E I R I C pronounced Oh!-ne-rik “to dream” is exactly that a hidden gem nestled in the heart of the cool-climate Elgin Valley, the valley is tucked away in the Kogelberg Biosphere in Elgin to be exact. I haven’t been there yet! I have however tasted a few of their wines. In recognition of the families many generations of mining stock, the Pascall’s decided to play on a Copper theme, with each varietal’s label playing on a different copper derivative; from Chalcopyrite/Fools Gold and Malachite to the rich blue of Azurite. The labels are striking and stand out on any wine list. The Oh! is our lighter “fun” side to our more serious range.
Appearance: Aroma: Taste
Violets, dark fruits, black current on the nose with a mulberry, savory, tomato leaf on the palate. It’s a strange category, because many, and possibly even most, red wines are and have always been blends. Filled with ripe, rich fruit and a plethora of spices. Winemakers blend grapes because it allows them, in a sense, to design a wine. A little Merlot can help soften Cabernet’s tannins.
Although typically complex, many rare red-wine blends do conform to certain patterns. Many are regional twists on the classic Bordeaux Blend; by adding their local signature grape to a basic Cabernet-Merlot blend. This wine is a 50% Merlot and 50% Cabernet Sauvignon.
Personal Food pairing:
The noticeable tannins make this blend make it an excellent choice to match with steak and other red meat dishes. Keep seasoning simple, such as salt and pepper. A prime rib will cope with this Blend too.
