O N E I R I C pronounced Oh!-ne-rik “to dream” is exactly that a hidden gem nestled in the heart of the cool-climate Elgin Valley, the valley is tucked away in the Kogelberg Biosphere in Elgin to be exact. I haven’t been there yet! I have however tasted a few of their wines. In recognition of the families many generations of mining stock, the Pascall’s decided to play on a Copper theme, with each varietal’s label playing on a different copper derivative; from Chalcopyrite/Fools Gold and Malachite to the rich blue of Azurite. The labels are striking and stand out on any wine list. Sauvignon Blanc is a white-wine grape from western France, now successfully grown in emerging and established wine regions all over the world.

An elegant, fragrant wine, with concentrated acidity, intensity and freshness.
Citrus, orange rind with hints of white peach and flower blossoms with a grapefruit pithiness.
Personal Food pairing:
And this style of Sauvignon is a good wine match with Japanese dishes such as sushi and sashimi, seafood-based steamed and fried dim sum and smoked salmon, particularly if the smoke is delicate.
I also enjoy these dishes with this wine, Cheese (especially goat cheese) Green vegetables (asparagus, zucchini, fresh peas, artichokes) and one of my favorites Oysters.
